Yummy Lemon-Garlic Kale

I don’t know about you, but some smoky, garlicky and zesty kale or collard greens make me SO happy! It’s definitely my favorite way to have these nutritious greens! (And even better with sweet, creamy sweet potatoes on the side!! – but I digress) For this recipe you can use any greens like kale, collard greens (or even broccoli greens from your garden like me!). Either way, it’ll be delicious! Hope you enjoy this recipe as much as I do!

For this recipe, you can use a little vinegar to taste in place of the lemon if you don’t have any on hand! I like my greens to have a nice little tang! When chopping your greens, make sure to cut out the thick stem, if you’re working with collard greens or something similar.

Yummy Lemon-Garlic Kale

Ingredients
  

  • 1 large bunch of greens washed, chopped and stems removed (or 2 cups)
  • 2 tablespoons olive oil
  • 1/2 lemon
  • 1 teaspoon minced garlic
  • 2 drops liquid smoke or 1/2 tsp smoked paprika
  • 1 teaspoon lemon zest Optional
  • generous amount of sea salt to taste

Instructions
 

  • Put olive oil and garlic in a cold pan and heat on medium until oil starts to heat up. Add greens to pan and heat until wilted.
  • Squeeze the fresh lemon onto the greens, and add the rest of the ingredients to taste. Stir thoroughly to mix and enjoy!

Notes

Do not heat the olive oil to a high temperature, it has a low smoke point. Can substitute olive oil with whatever oil you prefer.
