Soft Pumpkin Chocolate Chip Cookies

These cookies are a new fall tradition for me! Spiced pumpkin, melty chocolate chips, pillowy soft cookies, what’s not to love? Ring in the season with these soft, fresh pumpkin cookies! They come together easily in one bowl, and will be out of the oven before you know it! Here is my take on these pumpkin chocolate chip cookies.

My dear friend brought in these wonderful cookies to a workplace party, and they were an instant hit! The original cookies, although delicious, used Crisco (vegetable shortening) – not necessarily the healthiest thing. . . (and I never have that in my pantry, either). No worries! These cookies are every bit as delicious with coconut oil instead! Hope you enjoy them as much as we do over here!

For those who want to lighten it up further, this recipe also works fabulously when replacing the sugar with monk fruit sweetener! This Monkfruit Sweetener by Lakanto is the best one I have had. It is a natural sweetener and the taste is indistinguishable from real sugar. This way, I can enjoy my favorite treats this holiday without (totally) overdoing the sugar like I usually do!

Soft Pumpkin Chocolate Chip Cookies

Ingredients
  

  • 1 cup pumpkin puree not pumpkin pie filling
  • 1 cup sugar
  • 1/2 cup coconut oil
  • 1 egg
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 2 cups flour
  • 6 oz semisweet chocolate chips

Instructions
 

  • Preheat oven at 350°F.
  • Cream together pumkpin, sugar, and coconut oil.
  • Add the rest of the ingredients and stir to combine.
  • Drop spoonfuls of the cookie dough onto a greased cookie sheet.
  • Bake at 350°F for 12-15 minutes.

Notes

For a treat that is a little lighter in sugar, I like to replace all or half of the sugar with granulated Monkfruit sweetener!
