Easy Vegan Herb Gravy

This gravy has saved my Thanksgiving dinners year after year! Flavored with fresh vegetables and herbs instead of animal products, this vegan gravy is sure to please! But it’s not just good for Thanksgiving season, it’s easy enough to serve year round on ANY dish involving potatoes, or a meatless loaf!

Feel free to change the recipe depending what herbs and veggies you have on hand! Onions and mushrooms will greatly enhance the flavors, but as long as you have a good veggie broth, the gravy will be delicious. I like to add in a sprig of rosemary and sage to my gravy.

I always have a good vegetarian broth on hand, and this one by Better than Bouillon is currently my favorite! I prepare the broth according to the simple instructions, and add to my gravy!

Easy Vegan Gravy

Easy plant-based gravy that is perfect for your main course, and great for the holidays!

  • 3 tbsp vegan butter or olive oil
  • 1/2 onion chopped
  • 1/4 cup mushroom, chopped (optional)
  • 2 cups vegetarian broth
  • 2 tbsp corn starch
  • 1/4 cup cold water or plant milk
  • 1 tbs dry rubbed sage (optional)
  • 1 sprig of rosemary or other 'poultry herbs' (optional)
  • Soy sauce to taste
  • Freshly ground black pepper to taste


  • In a saucepan, thoroughly cook onions and mushrooms in butter on medium heat. Add in herbs and saute until fragrant.
  • Pour in broth and soy sauce to taste. Simmer until fragrant and use a fine mesh to remove herbs and sauteed vegetables if desired.
  • Whisk cold water and cornstarch in a small bowl until smooth. Add to broth in saucepan. Stirring constantly with a wire whisk, bring to a boil and heat for one minute. Season with black pepper and serve warm.


It will thicken up more as it cools. Can substitute butter with olive oil, if desired.
